Bourbon is well known in the world of specialty coffee, originally from Yemen. Managed to adapt to terroirs after many years of research, Red Bourbon has flavours of red berries and sweet spices with exquisite acidity and sweetness.
This bourbon process is experimental natural with fruit hydrolysis and 2 fermentation steps where the presence of oxygen is limited, allows the substrate the presence of specific microorganisms to achieve fruity processes and enhance enzyme-type reactions, which provide aromatic and citrus notes to the coffee.
Cherries are being fermented anaerobically in a tank for 60 hours before being depulped and fermented in an hydrolysis environment for another 24 hours.
This coffee roasted in small batches using the renowned Giesen 6KG Coffee Roaster from Netherlands. We entrust only the best equipment to bring out the rich flavours of our carefully selected beans.
