The Cuzcachapa cooperative is situated North of El Salvador's Ilamatepec volcano, in the South West of the country. The Cuzcachapa Mill is the largest cooperative mill in El Salvador, made up of over 1200 members and they takes care of a certified nursery of coffee varietals, including Castillo, Catimor and Sarchimor.
Coffee that grows in high elevations (SHG especially) typically means slower bean growth due to harsh conditions, the beans tend to develop slower, allowing more nutrients being delivered into the beans, resulting in more rich and flavorful coffee.
